The Pressing Process Matters
The method used to extract oil from sesame seeds significantly affects the quality, flavor, nutrition, and application of the final product.
Cold-Pressed Sesame Oil
Cold pressing means the seeds are pressed at temperatures below 50°C, preserving:
- Nutritional value: All natural vitamins, antioxidants, and sesamin compounds retained
- Flavor: Fresh, delicate, slightly nutty
- Color: Light golden (white sesame) or dark amber (black sesame)
- Best for: Premium culinary use, health supplements, cosmetic formulations
Expeller-Pressed Sesame Oil
Expeller pressing uses mechanical force at higher temperatures:
- Higher yield per batch
- Slightly reduced nutritional value due to heat
- More intense, roasted flavor (often used in Asian cooking)
- Best for: Asian cuisine, stir-frying, general food manufacturing
